Material

What is it made from, where did those materials come from, and what did their production cost?

Cooking maize in slaked lime dissolves the pericarp and releases bound niacin. The chemistry is why maize could become a staple instead of a deficiency.

Craft

Whose hands made it, what techniques were used, and how was that knowledge transmitted?

The judgement is entirely in the hand: how long the kernels rest, how much water the grind takes, when the dough stops tearing at the edge.

Culture

What does its presence mean, to whom, and how has that meaning changed?

A technique carried by women across a continent and several centuries without being written down. Industrial masa harina made it portable and, in the same movement, made the original taste like an occasion.

System

What ecological, economic, political, or logistical systems must exist for this to exist?

Landrace maize survives in smallholder fields, not commodity ones. Every restaurant that buys single-origin masa is paying to keep a seed variety alive.

Experience

What does it ask of or do to a body, a place, or the senses?

Fresh masa smells of lime and rain. Reheated tortillas made from it stay soft; industrial ones crack.
